the market haul
the pork kassler, wild boar bratwurst and prima donna cheese
walnuts + chestnuts
brussels sprouts + spinach

pan fried mackerel fillets with pickled shallots, oven roasted potatoes, fresh rucola + home made tartar sauce


fresh prawn pasta
sauteed shallots and garlic, white wine and prawns. the pasta and some of the cooking water were added to the pan when the pasta and the prawns were still slightly underdone and left to finish cooking and for the sauce to thicken and reduce. the fresh dill and pepper were stirred through at the end.

wild boar bratwurst, fresh spinach + turnip soup with lashings of prima donna cheese
smoked pork steak (kassler) with puy lentils, sauteed brussels sprouts, and chopped treviso
the lentils were cooked with some shallots + garlic that had softened in some leftover rendered duck fat with the addition of smoked paprika. they were cooked in twice their volume of goose stock until cooked (around 30 minutes). i then strained and set them aside the lentils, and with the remaining cooking liquid (which was very little), i went about reducing and thickening it slightly, in order to dress the lentils later. i did this by adding a splash of vinegar + olive oil to the reduced cooking liquid and dressing the rewarmed lentils, sauteed brussels sprouts, and shredded treviso.
the pork kassler with seared on both sides until cooked through. it was rested slightly before we sliced it and placed it over the lentil mixture
