saturday [belated food roundup]

the market haul
habanero chillis
kumquats: for marmelade
purple lamb's lettuce
smelts, from the elbe river
pan fried smelts with a purple lamb's lettuce + parsley salad with pickled shallots.
we also had the rest of the trout caviar


pan roasted venison on cauliflower puree with a pan sauce and a radicchio, witlof and parsley salad


cabbage pasta with bacon lardons, toasted pine nuts, parmesan and sage


poached quince with natural yoghurt and their poaching syrup

oven roasted carrot soup with toasted cumin, fresh ginger, lemon zest and parsley
pan seared calf livers with a radicchio, witlof and turnip salad

this was perfectly cook and amazing, however ugly it may look.
